gluten & dairy free anzac biscuits

Today is ANZAC Day, the day during which New Zealanders and Australians alike commemorate the soldiers that fought during the war at Gallipoli. In remembrance of this, we have a public holiday and the day off. So I thought it'd be appropriate to whip up a batch of deliciously oaty ANZAC bikkies!

I thought I'd make up my on recipe, something that's perhaps a bit healthier and also gluten and dairy free, so friendly for my tummy!
1 cup gluten-free rolled oats
1/2 cup desiccated coconut
1/4 cup brown sugar or coconut sugar
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
pinch of salt
1/2 cup oat flour
1/2 cup buckwheat flour
1 teaspoon baking powder
1/2 cup coconut oil
1 teaspoon vanilla essence
1/4 cup water
3 tablespoons golden syrup
Preheat the oven to 180 degrees Celsius and line a couple of baking trays. Combine all of the dry ingredients together except for the baking soda, in a large bowl. In a saucepan heat up all of the liquids and met together, they don't need to boil. Take the pan off of the heat and stir in the baking soda, it will fizz up so that's completely normal. Stir the liquids into the dry ingredients, shape into cookies and bake for 10-12 minutes or until golden.
