salted caramel pretzel brownies

Yup, you heard right, a triple-whammy of deliciousness. So I had a craving to do some baking since I hadn't done so in a while but had literally no idea what to make, I was craving salty and sweet but also chocolate and came up with this extravagance! And my god, it is damn good, #TREATYOSELF.

salted caramel pretzel brownies

brownie:

230g butter

2 cups sugar

2 cups cocoa, sifted

1/2t salt

1t vanilla essence

4 eggs

1 cup flour

Preheat the oven to 180C and line a brownie tray. Melt the butter, add in the sugar, cocoa and salt and stir well to combine. Next when the mixture is cool enough, add in the vanilla essence and eggs one at a time. Lastly, fold in the flour until its just combined. Pour into the prepared tray and bake for about 15-20 minutes or until a skewer is inserted and comes out clean. Set aside to cool.

salted caramel:

400g condensed milk

4T golden syrup

200g butter

1/2t salt

Put everything into a pot and melt together, let is boil for a bit to get golden in colour. If the mix looks like it's separating at all, use a whisk and mix together until it's well combined. Pour over the brownie.

pretzel crumble:

100g store-bought salted pretzels, crushed

1/4 cup rolled oats

50g butter

In a bowl, combine all the ingredients and rub in the butter like you would for a crumble. Sprinkle the mixture on top of the caramel and pop back into the oven for another 8-10 minutes for the caramel to get bubbly and set. Let the brownie cool then drizzle on some melted dark or milk chocolate to your liking. Cut up and enjoy!
