healthy brownies?!

Fudgy, gooey, chocolatey brownies are the most wonderfully decadent thing in the world. For me, nothing beats a warm brownie that's all melty and dense inside as an afternoon snack. Pretty much anything chocolatey and I'm immediately on it, like not even joking, I always have some form of chocolate in the house at all times.

Something I love almost as much as brownies is healthy food, I love love healthy food, my diet is like 90% healthy. So when I found this recipe for healthy brownies I almost died. Usually "healthy" baking recipes, in my experience, never turn out anywhere near comparable to the real thing, like sometimes they're not even worth eating. But this recipe, I was blown away by (even though I fiddled with it a bit), honestly these brownies taste almost as good as the real thing, no joke! They're refined sugar free, gluten free and dairy free (depending on what chocolate you use). I found this recipe by Anna Jones to use as inspiration, however, pistachios and raspberries are SO expensive right now so I switched those up. Here's how I made them:

Fudgy Walnut and Berry Chocolate Brownies (makes 12-16 squares)

3 eggs, beaten 200g sugar-free dark chocolate 150g coconut oil 150g coconut sugar 1t vanilla 160g ground almonds 1/2t baking powder 125g mixed berries 50g walnuts (or nuts of your choice)

1. Put a pot of water filled a little bit of the way up on to simmer. In a glass bowl, put in 150g of the chocolate and the coconut oil. Place the bowl on top of the simmering pot and leave to melt. Set aside to cool. 2. Add to the melted chocolate mixture, the sugar, vanilla and eggs and mix until well combined.

3. Fold in the almonds, baking powder, berries and half of the nuts. pour into a lined baking tin. 4. Sprinkle the remaining chocolate and nuts on top. 5. Bake in a preheated 180C for 25-30 minutes or until desired fudginess.
